Granola and Greek Yoghurt Tart

A healthy breakfast that feels like dessert!

Ingredients (makes two cups)
54g oats (2 sachets of Quaker oats)
1 banana
2 tbsp honey
1 tbsp cinnamon
0% Greek yoghurt
Fruit of your choice for the topping
Method
1) Mash the banana
2) Add honey and cinnamon
3) Mix in the oats
4) Line a cupcake tin with a little coconut oil for non stick
5) Scoop out a handful of the mixture and add it into the cupcake tray. With your hands, gently press the mixture into the shape of the cup. This will leave you with a hole in the centre to place the Greek yoghurt once it is cooked. Make sure you do not excessively flatten or the tart crust may be too thin and may crumble when it comes to removal.
6) Bake at 200 degrees until the crust is golden and crispy.
7) Leave to cool for 20 mins. Once cool you can remove from the cupcake holder.
8) Add the Greek yoghurt into the tart crust. On top of the Greek yoghurt place fruit of your choice. I recommend kiwi, strawberry, blueberry, blackberry or mango - or a mix of them all. You may even add a square of dark chocolate for decoration and a little bitterness to contrast the sweet.
9) Allow the tart to chill in the fridge for another 30 mins.
