Healthy Homemade Noodle Soup

One of my favourite comfort foods, especially when the weather takes a turn for the worst, is a spicy bowl of Pho or any other noodle soup! So here is a 15 minute healthy noodle soup recipe.

Ingredients
2 cloves garlic
1 thumb size piece of ginger
1 tsp turmeric
1 tbsp soy sauce
2 chicken stock cubes
2 red chillis
1 tsp siracha sauce
Big bunch of fresh coriander
2 spring onions
145g Soy bean spaghetti (1/4 pack)
1 tsp sesame oil
Optional: mange touts, shredded carrot, bok choy, broccoli or any other veggies you like.
Method
1) In a saucepan fry the ginger, garlic, spring onion and chilli in sesame oil.
2) Add the stock cubes into a mug of boiling water. Stir thoroughly to break down the cube. Add the soy sauce and siracha sauce and keep stirring.
3) Once the garlic has softened add the broth into the saucepan, plus one more mug of boiling water. Incorporate the soy bean spaghetti and the vegetables of your choice.
4) Keep stirring well over a high heat. Wait for the noodles to soften.
5) Once the spaghetti is ready add in the coriander.
6) Get your chopsticks ready to tuck in.
Note: Soy bean spaghetti noodles can be found in Aldi and online. These are a delicious low carb alternative to egg or rice noodles.
You could even add prawns or shredded chicken, although the recipe is still delicious and high protein as a vegetarian meal.
