Salmon in a Coconut, Coriander and Mint Crust

Ingredients (Feeds 4)
4 Salmon Fillets
30g fresh mint
2 big handfuls of fresh coriander
60g dessicated coconut
2 tbsp honey
2 green chillis
1 lemon or lime (juiced)
2 garlic cloves
1 tbsp cumin seeds
Method
1) Blend all ingredients with the exception of the fish in a food processor (sample flavour to make sure you like it - you can add more coconut, chilli, mint etc according to how you like it).
2) Line a baking tray with coconut oil and lay the salmon fillets on top.
3) Coat the fillets generously in the blended mixture (rub onto both the tops and the sides of the salmon to coat it completely).
4) Sprinkle some extra coconut lightly on top. Bake for around 20 mins at 180 degrees, or until the salmon is fully cooked on the inside.
Note: this recipe also goes well with white fish. You may even like to add pistachios to it for a little extra crunch to the crust.
